I am sorry vegetable pasta, but you have been replaced. My favorite dish now is ratatouille. I remember watching Ratatouille and thinking how complicated the dish looked. Well, do not be intimated because it is actually very easy to make. If I can make ratotuille, then anyone can make it. The simple ingredients sure pack a punch!
1 small zucchini
1 small squash
1 small sweet potato
2 garlic cloves, finely chopped
1 tsp dried oregano
1 cup no salt added tomato sauce (I used Sprout’s Tomato Sauce)
olive oil spray
salt and pepper
Preheat oven to 375F.
Use a mandoline to create thin slices of zucchini, squash, and sweet potato.
Pour the tomato sauce on the bottom of the baking dish. Top the sauce with the garlic, 1/2 tsp dried oregano, and the salt and pepper.
Arrange the vegetable slices over the sauce.
Coat the slices with the olive oil cooking spray. Sprinkle the top with the remaining dried oregano.
Cover the dish with foil and seal the edges.
Bake for 45-50 minutes.

I would like to start running... but I'm incredibly "bad" at it. I love going to the gym, but running was never my thing. However, I know it's the right thing to do. Any tips for beginner-clumsy-chubby-runner :) xx
Hey! Sorry for the delayed response, I haven't been on tumblr much recently!
That's great that you want to get into running=] I'm not a professional or anything, so my suggestions are from experience and people who have helped me out.
If you want to start running and actually end up LIKING it, then the best way is to start very slowly. Basically, what I did was to run for, say, 5 to 10 minutes at a time. As long as I could handle without dying. Personally, I have to run every day to keep up the habit, so just keep doing that every day, slowly building on those times until you reach maybe 20 minutes.
Also, make sure to vary it up! I like to run outside as well as on treadmills (treadmills make it easier to see distance, time, and speed).
Drink a TON of water. Not so much right before a run, and only little sips during a run if you want, but all day just carry a water bottle around and make drinking out of it a habit.
Make sure not to eat a heavy amount before a run. stick with carbs 3-5 hours before a run and try to have a little snack an hour before your run (like an apple). This is different for everyone so just experiment with what makes your body respond the best.
Set goals for yourself, but don't kill yourself to reach them. I used to burn myself out the first few times I ran and ended up hating it. It wasn't until I allowed myself to NOT reach my goals if I couldn't that I started to enjoy it.
My last bit of advice would be to listen to music! It makes it so much more bearable. Anything with a good upbeat tempo works wonders really.
I hope this helps! If you still don't like running or don't feel like you're improving, there are so many others ways to be active so don't feel like you have to run. That just adds more stress to your life.

It feels weird not running
but I really just don't have the energy. Sleeping 8 or more hours a night and still needing naps is probably not such a good sign. Hopefully I'll find out tomorrow if it's my gall bladder making my stomach hate meeee.

Running and Starving
I might have to take a slight break from running for a bit. I've had stomach issues for the past 2 or 3 years and they've been getting worse recently. I've cut down my food options severely and that makes it really hard to eat enough but I'd rather that than all the pain that comes with eating too much! Goin to the doc tomorrow to see if they can figure this shit out.
Ran 20 minutes today though! I'll try to see if I can keep doing that. Life's a bitchhh sometimes.
