Broiled Bailey’s Hot Chocolate
THANKSGIVING PUMPKIN PIE OF THE GODS!
I got this recipe out of some magazine years ago. I've since tweaked it a bit. Try as I might, I have yet to discover a pumpkin pie recipe more phenomenal than this one. I hope it makes your Thanksgiving wonderful!
Preheat oven to 425 F.
Mix together 2 cups canned pumpkin, 1 (14 oz.) can sweetened condensed milk, 2 large eggs, 1 1/2 tsp. cinnamon, 1/2 tsp. ground ginger, 1/2 tsp. ground nutmeg, and 1/2 tsp. salt. Pour mixture into a deep dish pie shell (either homemade or store bought).
Bake for 15 minutes. Reduce temperature to 350 F.
While that bakes, combine 1/4 cup packed brown sugar, 2 tbs. flour, and 3/4 tsp. cinnamon. Cut in 2 tbs. unsalted butter and mix until crumbly. Stir in 3/4 cup chopped pecans.
Pour mixture over pie and bake for another 35 minutes. Allow to cool completely. Top with freshly whipped cream. Have a mouthgasm.
Made these last night. Highly suggest adding a bit of rosemary to the goat cheese!
Nutella Mug Brownies
It's snowing here, but that gross snow where the skies are grey and the roads are slush and only flurries are falling from the clouds. The kind of snow that makes you want to stay in your pajamas all day and eat baked goods. Here's a quick and easy mug recipe:
Take a really big mug
Add 1/4 cup flour of your choosing (I use whole wheat)
Add 1/4 cup sugar (or 1/8 cup sugar, 1/8 cup stevia)
Add 2 tablespoons unsweetened cocoa powder
Add 2 tablespoons extra virgin olive oil
Add 3 tablespoons water
Add a pinch of salt
Stir well
Put a heaping spoonful of nutella on top of the mixture
Microwave for one minute and forty seconds
Enjoy!
