This sushi recipe is a mix of Italian-American and Japanese food. It was inspired by the popular Cheesecake Factory Shrimp Scampi dish, which has shrimp that are juicy and filled with creamy cheese.
Ingredients: 8 sheets nori seaweed. 2 cups sushi rice, cooked and seasoned. 16 large shrimp, cooked and peeled. 1 cup cream cheese, softened. 1/4 cup mayonnaise. 1/4 cup grated Parmesan cheese. 2 cloves garlic, minced. 2 tablespoons lemon juice. 1 tablespoon chopped parsley. Salt and pepper to taste. Soy sauce for serving.
Instructions: Lay a sheet of nori on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a small border at the top. In a bowl, mix together cream cheese, mayonnaise, Parmesan cheese, garlic, lemon juice, parsley, salt, and pepper. Spread a thin layer of the cream cheese mixture over the rice. Place 2 shrimp on the edge of the nori sheet. Roll the sushi tightly using the bamboo mat, sealing the edge with water. Repeat with the remaining ingredients. Slice each sushi roll into 6-8 pieces. Serve with soy sauce for dipping.
