Why Honey and Not Sugar:
Honey and Sugar both add sweetness to food. However, they have highly contrasting tastes, textures, and nutritional profiles.
Honey has antimicrobial, antibacterial, anti-viral, anti-inflammatory, anti-allergenic properties, and healing properties, while Sugar has no such special properties.
Honey undergoes little to no processing and can be used in its natural state whereas, Sugar undergoes extensive manufacturing and processing. Less processed food is much healthier and is loaded with natural nutrients.
The sucrose in honey is already broken down by the bees, and it has higher enzyme content than sugar which must be ingested before it breaks down. This makes honey much easier to digest and lighter to digest.
