Vegan Jackfruit Seitan BBQ Ribz
1 Can Jackfruit
3/4 cup vegetable broth
1 tsp liquid smoke
1 Tbs Soy Sauce
1/4 cup Tahini
1 cup Wheat Gluten
2 Tbs Nutritional Yeast
1 TBS Smoked Paprika
2 tsp Onion powder
2 tsp garlic powder
Drain and boil the jackfruit for 10 min. Cool..Drain and mash.
Add Dry ingredients to a bowl and mix
Add Wet ingredients to another bowl and mix with the jackfruit.Â
Combine wet and dry to form a Seitan dough.
Press onto a cookie sheet ( you can score the slab to make it easy to pull apart pieces) Bake 400 degrees for 25 min. then flip and coat top and bottom with BBQ sauce. Bake 20 min more.Â
Cut apart or tear at score marks.. Add more sauce if you like.Â
BBQÂ Pulled Jackfruit Tacos.Â
2 Cans Jackfruit in water or brine
1 T Olive Oil
1/2 cup sliced yellow onion
3 cloves minced garlic
1/4 cup vegetable broth
1/2 - 3/4 cup BBQ sauce
Drain and rinse jackfruit. Slice jackfruit for pulled texture. Sautee the onion and garlic in the olive oil for about 5 min. Add the Jackfruit and vegetable broth. Cover and cook for 10 min until the jackfruit is soft. Go ahead and mash the jackfruit so it shreds. Bake in a preheated 400 degree oven on a baking sheet for 15 min. Remove and toss with BBQ sauce. Return to baking sheet and bake 10 min more. (some shreds will be dark and crispy. Remove and add more BBQ sauce if desired.Â
I used corn tortillas in an air fryer. You can also just serve on a bun.Â

Vegan Chocolate Peanut Butter Brownies
Ingredients
FOR THE PEANUT BUTTER SWIRL:
1â2 cup creamy natural peanut butter
1â3 cup powdered sugar, sifted
1 tablespoon refined coconut oil,melted
1â2 teaspoon pure vanilla extract
Pinch salt
FOR THE BROWNIES:
3 ounces semisweet chocolate chips 1â4 cup refined coconut oil 1â3 cup unsweetened almond milk (or your favorite nondairy milk), at room temperature 1 teaspoon pure vanilla extract 1 tablespoon cornstarch 2â3 cup granulated sugar 3â4 cup plus 2 tablespoons all-purpose flour 3 tablespoons Dutch-process cocoa powder 1â2 teaspoon baking powder 1â8 teaspoon salt
Directions:
MAKE THE PEANUT BUTTER SWIRL: In a mixing bowl, stir together all the ingredients until smooth. Set aside.
MAKE THE BROWNIES: Preheat the oven to 350°F. Line an 8-inch square metal pan with aluminum foil, then coat the foil with nonstick cooking spray.
In a large metal bowl set over a saucepan of simmering water, melt the chocolate with the coconut oil, stirring with a rubber spatula, until smooth. Remove from the heat. OR Just microwave on defrost for 3 min.
In a mixing bowl, whisk together the milk, vanilla, and cornstarch. Add the warm chocolate mixture to the mixing bowl and whisk until well combined. Add the sugar and mix well.
Sift in the flour, cocoa, baking powder, and salt and fold until combined (a few lumps are okay). Pour the batter into the prepared pan and spread it to the edges.
Drop spoonfuls of the peanut butter mixture onto the brownie batter in the pan, then use a butter knife to swirl it in. Bake until a toothpick inserted in the center comes out mostly clean, apx. 25 min
Cool and serve
