It’s time to put spring produce to good use in the kitchen! Our first spring recipe uses sweet peas, a slightly sweeter and crunchier version of traditional green peas.

This hummus can be used as a dip, or spread on your favorite sandwich for some extra flavor.

Ingredients:

2 cups fresh sweet peas, shelled and lightly steamed

2 tbsp lemon juice, freshly squeezed

1.5 tbsp tahini

1 tbsp olive oil

1-2 garlic cloves, minced

pinch of salt

handful of your favorite herb, chopped (we recommend parsley, cilantro or mint)

Directions:

Place steamed peas, lemon juice, tahini, garlic and salt in food processor

Pulse to combine ingredients

Pour the olive oil in slowly and blend

Taste hummus and add more olive oil if mixture is too thick

Add herbs into processor, and pulse a few extra times to combine

Yields roughly 4 servings. Approximate calories per serving: 129.
