New Recipe Was A Bust
So I tried making a new recipe using fire roasted chili peppers and it just wasn’t edible... I love experimenting with food and sometimes that means you create dishes that just aren’t that appetizing. The chili peppers were way too spicy even after I removed the seeds and membranes from the peppers. Back to the drawing board. I’m on a mission to save the recipe so I can add some more healthy dinner options to my menu this summer.
Grilling some kabobs for lunch and roasting some chilies for a recipe for later 😋

Only 300 calories for this barbecue chicken salad made with turkey bacon, scallions, cherry tomatoes, roasted corn, and boneless skinless chicken breast tossed in honey barbecue sauce... can’t wait to eat it!
Trying to find healthy options on a college campus can be difficult. Most commons will have a salad bar, which is a great place to start. I made this salad from spring mix lettuce, bell pepper slices, asparagus spears, mushrooms and grilled chicken from the salad bar on my campus.
