Low cal desserts
5 low cal dessert quickies!
Desserts- the word itself exudes indulgence. The sinful pleasures that we derive from a scoop of sundae or a hearty slice of cheesecake, is inexplicable. And then within few minutes we take off on a guilt trip, berating ourselves for such ‘shameless and/or careless behavior’. So, as a foodie, who can’t stay without a small morsel of a sweet something, I managed to research the most low calorie desserts (or stuff that you can eat as desserts) and get them approved by my nutritionist (which kind of sanctions my daily dose of sweetness :) )
Here’s a list of 5 desserts that Low on calories and low on efforts in making them. So, go for the sugar-rush, guilt free!
Trifle pudding: My version of the classic. Sponge cakes or cupcakes are always handy at home. Cut of a small slice, place it in a quart size baking dish. Take a few spoonfuls of fruit flavored yogurts. Berry flavors taste better. But you can pretty much use any. Whip it up so it thickens. Spread it evenly on the cake. Top it off with chopped fruits/ raisins/nuts of your choice. Refrigerate it for 30 minutes to an hour (depends on your portions). And voila! You have a revamped trifle pudding.
Roasted Apples/Pears with honey syrup: Apples and pears are always a must-have in a household. Skin an apple or a pear. Or you could mix them both. The sweet and tart blend creates magic on your taste-buds. Roast them on a skillet till they get a little char on. Slice them and drizzle a little farm-fresh honey. A light garnish of slivered almonds or pistachios can add a little crunch to the fruits.
Candied nuts: Of course you get packaged ones, but remember, extra sugar and preservatives? Take whole almonds, hazelnuts, walnuts (I prefer avoiding cashews and pine nuts for their fatty content). Lightly roast them on a flat pan. Coat them in honey or maple syrup and freeze them for an hour. You can store them up for a week in the chiller tray. Try them just like that or use them as a topping for plain yogurt, custard or simple vanilla ice-cream.
Fruitsicles: Popsicles made from fresh fruit, has been a favorite since my childhood. When I was a kid, every summer, my mom would blend a watermelon or orange or pineapple and freeze them in a popsicle mould. These fruits have so much fructose, you don't need any extra! Freeze them for a few hours and you are ready with a refreshing summer treat.
Mango mousse with yogurt: Take a bowl of yogurt and hang it in a fine cloth, so all the whey drains out. Don't discard the whey. You can drink it just like that with a pinch of salt. Now back to the curd. You can keep it overnight. So next day it's ready for use. Whip the curd with a manual egg beater. an electric blender will make it watery again. Take the pulp of 1 ripe mango and gently fold it with the hung curd. Mangoes are naturally sweet so you don't need extra sugar. If at all, drizzle a little honey on top. Cool it for a while and you have a redefined mousse.
