I love Dundy. I don't know how hard this game is. But I don't think he's actually good at it. It's too hard. He doesn't want to strain his brain over this. He doesn't want to have to try. He doesn't want be "the guy looking at his phone looking angry" even though he frequently is. He beat Graham and thought for a brief moment he could actually win it all, but he's no ready to play in the big leagues, he's not that good. So he's going to give up as if he never really cared, instead of double down.
