Aperitif: - Macerated beetroot in apple juice, infused with lemon zest, dry white wine and sparkling water, with a slice of blood apple (created by Raoul Audouin) Starter: “Ecology of the dutch (+) Rhizosphere ” — øllebrød (porridge made out of beer, bread and salt eaten in Denmark for more than 800 years), knækbrød (cracker made of flaxseedand chia seeds), steamed and caramelized orange turnip, lemon/pepper buttermilk, garnished with foraged edible weeds and flowers: yarrow (duizendblad) flower and leaves, wild mustard flower and nasturtium leaves - served with flowery white wine Main: “Stamppot pies” - 6 different stamppot fillings prepared the day before by the participants, incased in a buckwheat puff pastry, served with vegetable gravy, pearl onions, gherkins and foraged ……… - served with italian light red wine (‘Tutti i giorni Rosso’) Dessert: “Sneeuw eieren” - Poached meringues with boerejongen (6 weeks brandy and cinnamon macerated raisins) served on a bed of vanilla and boeremeisje custard (6 weeks whisky and lemon zest macerated apricots) drizzled with hot tangy caramel - served with pear cider from Bretagne #pie #custard #starter #vegeterian #dutchfood #nederlandsekeuken (bij fanfare) https://www.instagram.com/p/BpmVpKzhwtJ/?utm_source=ig_tumblr_share&igshid=d902ncv6ikv1
