So the past week I’ve been struggling with the lack of energy and feeling hungry whilst trying to deal with this diet. It got to a point where I was shaking because of the lack of energy in my system. But hallelujah for Lamb & Leek Burgers!! They are highly highly recommended! They’re tasty, healthy, relatively quick and easy to make. *I didn’t make the lemon cream*
I’m not sure about everyone else but I’m not so keen on eating heart and gizzard so this recipe was a life saver.
So, I had mine with loads of salad and fried off extra leek to put in the salad. I also used half the recipe and made two thick burgers. I’ll post photos of the end result below!
To make the burgers;
Use half of the oil and fry off the leek until it’s soft (3-5 minutes)
Take the leek out and sit them in a bowl to cool
Open the mince and add the garlic powder and salt (and the leek once cooled) and mix with your hands.
Then use the mixture to roll the burgers. **my advice would be to not make them too thick as they have to cook through and the outsides get slightly burnt (didn’t bother me)**
Use the other half of the oil to cook the burgers. Mine took about 10 -12 minutes but that was because they were so thick. For thinner burgers maybe 3-4 minutes each side.

Tried to make sweet potato crisps today. I’ve never been too sure about sweet potato but it’s something I can have so I’m keen to explore all avenues.
They were okay! I’m never sure about sweet food that’s supposed to be savoury but they didn’t make me feel ill so it’s a good start. My sister loved them though!
To make:
Thinly slice a sweet potato (or if you have a mechanical slicer, use that)
Place the slices in a bowl and pour over some olive oil.
Ensure both sides of the sweet potato slice are coated in oil and add salt to taste.
Lay each slice onto greaseproof paper covered baking trays and place in the oven for 15-20 minutes at 200 degrees Celsius.
