Moving to level three has allowed us to have a small portion of our lives back.
As much as we are in the midst of a pandemic, one should still remember to do the things that makes them happy. Moving to level three has allowed us to do those things.
Yellow Rice With Hearty Beef Stew
This meal reminds me so much of home ( Eastern Cape) but since no traveling is permitted we will have to remember home through this meal.
What you will need
2 Cups of rice
2 Big carrots
2 Potatoes
Beef stew
1/2 Green pepper
1/2 Onion
1 Tub of beef stock
2 Big bay leaves
1tsp Oregano
1 Chilies
1 Tbsp barbeque
1 Tsp turmeric
1 Tbsp tomato paste
1 Can of tomatoes
How to make Yellow Rice With Hearty Beef Stew
Cook the rice as instructed on the packet. Once rice is cooked fry onion and pepper in hot pan then add the rice and turmeric. Fry until the rice is yellow.
For the beef stew fry onion, chilies and garlic until soft then add in all your spices, beef stock and your meat. Fry until the meat is brown then add the can of tomatoes and tomato paste. Mix together and add 3 cups of water, once it starts to boil add in your vegetable's and cook on low heat for one and half an hour or until meat is tender.
Serve and Enjoy!
Tip for success
If you do not have Turmeric substitute it with Rajah.
Lazy Breakfast For One
what you will need
2 eggs
2 Slices of bread
2 Rashers of bacon
A handful of mushrooms
1 Rip avocado
cooking oil
clinging plastic
How to make a Lazy Breakfast For One
Carefully place clinging plastic into a glass, add a small portion of oil and then add your eggs into the plastic. Tie up the plastic up and put it into a pot of boiling water. Leave the eggs in the pot for 3-5 minutes or until eggs is cooked.
In a pan fry your bacon until it is golden brown or crispy then in the same pan fry your mushrooms and garlic until soft.
Mash avocado in a small bowl. Then spread it evenly on one slice of bread. on the other slice of bread a your mushrooms and bacon on it. For the finishing touch place an egg on top of both slices and garnish with ground pepper.
serve with a hot cup of coffee.

Grilled Pork Chops and Vegetables
If like me you feeling guilty for the over indulging that you have been doin during this lock down then this is the perfect dish to make you feel a little bit good about yourself. Who said healthy eating is not tasty?
What you will need
3 Big carrots
A packet of green beans
A packet of bay corn cob
A packet of baby potatoes
Pork Chops
2 Tsp of garlic
2 Tbsp. of mixed herbs
1 Tbsp. of Barbeque spice
2 Tbsp. of butter
1 Tbsp. of salt
How to make Grilled Pork chops and Vegetables
Chop your carrots into small round pieces then mix them with your green beans, baby corn cob and baby potatoes. In a oven pan add the 1 tbsp of butter, salt, 1 tbsp of mixed herbs and garlic. Mix the vegetables into the oven pan and mix them up, then place the pan into the oven for 30 minutes or less keep mixing it up to avoid it from burring. Remember you want your vegetables to be nice and crunchy so do not over cook.
While your vegetables are cooking, season the pork chops with the barbeque spice. In a hot frying/grilling pan add 1 tbsp of garlic, mixed herbs and butter. Once the garlic has turned light brown add in your chops. Grill for five minutes on each side or until the fat turns golden brown.
I love this dish because not only is it supper easy to make but it is also healthy. Once everything has cooked dish and serve.
Tips for success
Boil your potatoes before roosting them with the other vegetables so they do not take longer to cook in the oven and poke holes in them with a fork for them to be extra tasty.

Spicy Chicken Soup
The winter is only getting colder by the day try this recipe to keep you warm through this winter.
What you will need
3 Boneless chicken breast (if you don't have the boneless ones just remember to remove the bones before cooking)
3 Tbsp. of oil
2 Big carrots
2 Potatoes
2 Chicken stock tubes
2 Chilies
1 Tbsp. Aromat
1 Tbsp. black pepper
1 Tsp garlic (optional)
1 tsp mixed herbs
1 Tsp chicken spice
1 Onion
1 Stalk of celery (optional)
Less then a handful of spaghetti
Water
How to make Spicy Chicken Soup
Get the chopping out the way first. Chop onion, chili and celery and set it aside then chop the carrots into a small round size and cut the potatoes into four quarters.
In a medium pot add in the oil, garlic and onion mixture and fry. Once the onion mixture turns light brown mix in the spices and chicken stock. Let it boil then add in the vegetables and spaghetti.
Once it boils again add in the chicken pieces and let them cook for 10-15 minutes. When the chicken is cooked remove from the pot and set it aside for it to cool down then once it has cooled down shred it with a folk and add it back to the pot. Cook again for about 10 minutes or until potatoes and spaghetti are cooked. Do not forget to gradually add water so that your soup is not very thick.
Tips for success
If your potatoes are getting overcooked set them aside and add them when you about to dish out.
You can serve this with bread or as is.
