Healthy Banana Brownies
Yields 9 brownies.
Preheat oven to 350 F. Use 8x8 in pan.
Ingredients:
· 3 large bananas, mashed (mash them before adding other ingredients)
· 1/3 cup stevia in the raw
· 2 teaspoons pure vanilla extract
· 1 large egg
· ¾ cup all–purpose flour
· ¾ cup unsweetened cocoa powder
· 2 teaspoons baking powder
1/8 teaspoon salt
· 1/3 cup unsweetened almond milk
· 3 tsp. coconut oil, melted
· ½ cup chopped walnuts
· non-stick cooking spray, for preparing pan
Directions:
Mash bananas, then mix with stevia, vanilla, and egg. Add dry ingredients and mix until just combined. Melt oil, add, then mix. Add milk and then nuts, and mix. Prepare an 8x8 glass baking pan with cooking spray, then add batter. Bake for 25 minutes.
Do not over mix.
Brownies will have a moist, spongy texture and are best served cool.
