Beef tongue is an extremely delicious meat with a perfect texture for sandwiches and cold meat platter preparations. This is kısır, a very popular summertime cracked bulgur wheat salad in Turkey. If you are a fan of tabbouleh you are sure to like this! Once the bulgur wheat has been steeped in some boiling water, it can be mixed with the fresh herbs, tomatoes, and cucumber. This one is made mostly from farmers' market tomatoes, Kirby cucumbers, mint, parsley, scallions and store-bought Turkish red pepper paste (like tomato paste, but made from peppers). Mix into that some great olive oil and pomegranate molasses. It is a cool and refreshing treat for a hot summer day. Lay's is at it again with some unusual flavorings in China. This one is Jinshuang beer flavored (劲爽啤酒味). Not sure what this has to do with Mt. An Isaac-inspired (“Om Gai” อ่อมไก่) chicken stew made mostly from farmers’ market ingredients. Dill provides for a very interesting flavor for this stew, which is further enhanced with fermented fish and thickened with roasted sticky rice. Mangosteens (“mangkut” มังคุด in Thai) are one of my favorite fruits in Thailand. They were banned for import to the US for a long time. In recent years they have been a rare treat from Philly's Chinese and Southeast Asian markets. This year they seem to be more and more common! Sunday’s roast: an Ilonggo-style red adobo (Adobong pula achuete), with @brophysspringhollowfarm lamb shanks. From the incredible cookbook I Am a Filipino and This is How We Cook by @nicoleponseca and @chefmigsnyc (2018). White goosefoot (aka wild spinach, lamb’s quarters, etc) grows rampant in front of my house in East Falls. It is a delicious plant! Last month I regularly paired it with farmers’ market mustard greens and goat feta from Betty’s Acres for a luxurious version of something like saag paneer. White goosefoot is actually common in South Asia, where it is also cultivated! This morning I attempted a favorite breakfast food in Mongolia, bantan (бантан/ᠪᠠᠨᠲᠠᠩ). This is a wheat flour gruel often flavored with lamb, onion, salt and pepper. Today’s version is from the Modern Nomad’s cookbook (Уламжлалт монгол хоолны 99 жор) which also features pickled khaliar onion (халиар/ᠬᠠᠯᠢᠶᠠᠷ, allium victorialis, 茖葱). Tiny wheat “noodles” are formed by adding a tiny amount of water to a bowl of flour, and by continuously shaking the bowl and massaging the flour until it is reduced to rice grain-sized pieces. Mine wasn’t so uniform in the end, with some big and some small “noodles”. In Mongolian terms, I was shooting for the “lamb” sized noodle (хурган), as opposed to the larger “sheep” or “cow” sized noodles.
