Speaking as someone who also just got over that fear, I’d say sometimes it’s well worth the risk. But if you want to just keep it to yourself then that’s also pretty valid. Sometimes you need to be brave, sometimes you’re not ready.

What made you choose to follow your current career path?

Well, I've always been good at cooking and with nine of us in the house, let's just say that cooking for a crowd isn't new to me. And once I realized that the only way I was going to go to college was if I was willing to graduate with more debt than I could ever see myself paying off, I figured I could put my talent to more practical use.

Where do you see yourself in 5 years?

Either as a sous chef or—if I end up getting a business diploma after I finish my culinary arts classes—maybe running my own catering business.

What are three of your greatest talents? Don't try to be modest!

Turning leftovers into meals even a picky five-year-old enjoys.

I can put on a passable Irish accent (Belfast).

I'm a very gifted bowler.

What is your favorite way to pass time?

I like to get creative in the kitchen. One day, maybe it'll be my job to be that way, and some of the fun will go out of it if I'm forced to be creative day in and day out, but right now, when I'm spending my work days dicing onions and shredding mozzarella, it's kind of fun to see what I can do with a couple of day-old baguettes, the produce in the crisper, and a few sauces and seasonings...

Do you believe in karma?

I think it's a thing, but it's not the only thing. I mean, sure what goes around comes around, but sometimes stuff just... happens.

Would you rather spend one year with your one true love just to never see them again or the rest of your life with second best?

Who says you only get one true love?

What's your biggest "what if"?

What if I'd made it onto Nailed It! and won? I sent in a demo tape but never got a call back. Maybe my kitchen disaster didn't look disastrous enough?

That would be nice. Seriously. But it’s one more luxury I just don’t have. And since Mama can’t be there, it sort of is my problem. Or responsibility. Same difference. I mean, what am I supposed to tell her to do? Risk losing her job to make the meeting? You can’t support nine people on a food porter’s salary and some occasional leftovers.

Sorry, but this is what it is.

I can’t imagine the principal will actually talk to you about anything related to disciplinary action that needs to be taken since you’re you and not your mother, but perhaps that’s just my take on it all. I don’t know. I think you may be making a mountain out of a mole hill, but you know, may the force be with you!

He just wants to know some adult is aware. That's either Mama or me. And Mama had me put on file as 'authorized'. Still, maybe I can get her to see if the school will let her authorize Bridget too. I mean, even if she's still in high school, she's pretty responsible too.

It's a thought. I can sort of maybe spin it as my going down there could jeopardize my job and she's got used to things being a little easier in that department.

Maybe I could write Bridget an authorization letter. I mean, I am legally an adult. Kinda sorta...
