If we're AU or OC does it have to have a normal career and take a normal human form?
No, it’s not necessary for them to have a normal career or even be a human at all. They can be a vampire, mutant, robot, or any sort of species you want to take up! That being said, you’ll have to do thorough research on the species you want to roleplay first and keep it as accurate as possible. Even if you’re going to play a normal human with any sort of career (or none, it’s up to you to decide—they can be a lazy bum who doesn’t want to work but then you’ll have to sort out the details on how they’re going to survive, maybe on savings or inheritance if they’re from a rich family), you should also do research on the job you want them to have. Accurate portrayal is the most important factor, other than that, you can basically be anything you want.

What's the difference with general, semi-au, au, or oc kind of rp?
If you are portraying a general character, you try your best to portray them as realistically as you can. If they are an idol, you try to keep up with their persona, things they have done, group mates, etc. (ex: Jackson doesn’t like spicy food. So if you were portraying him in a general verse, he wouldn’t like spicy food.)
If you are portraying a semi-au character; maybe you have ¹minor personality tweaks, or maybe you ²changed their background a bit, there’s also things like maybe they have ³another job or hobby that they focus on as well as being an idol. (ex: ¹Jackson doesn’t really show his sensitive side, but the way I portray him he does. ²Jackson is from Hong Kong originally, maybe you changed it up and he moved to Korea sooner than he actually did. ³Jackson is an idol by day, street racer by night.)
If you portray an au verse character; you have the freedom to tweak their personalities and backgrounds. They don’t have to be idols, they could be a gardener, a skater, a choreographer, etc. It depends on what you’d like to do to be honest. Usually the only thing that is the same about their actual face claim, is the basics: their name, weight, height, etc. A good example being Admin Chase.
Lastly, but most certainly not least are original characters. Original characters in my opinion are probably the coolest thing a writer can create, simply because all of the details are up to you. You get to decide their backstory, their personality, small quirks they might have, and to put it simply you have the most freedom being an oc. A good example being Admin Scarlett.
