Peanut Butter Banana Muffins
⢠1 cup natural peanut butter ⢠2 ripe mashed bananas ⢠1/4 cup honey, agave, or a bit of liquid stevia ⢠3 eggs ⢠1 tsp vanilla extract ⢠1 tsp baking soda ⢠pinch salt
You can also add chocolate chips, jam, fruit bits, crushed nuts, etc.
â> Preheat oven to 350 and grease a muffin tin
â> combine all ingredients in a bowl until smooth and combined, add anything extra youâd like
â> line the muffin tin with paper liners and fill them up about 2/3rd of the way
â> bake for for 15 minutes, take it out and let it cool
â> ENJOY! x

Healthy Red Velvet Cake dipÂ

16 oz. cream cheese, cottage cheese, greek yogurt, or tofu
1/2 cup beet puree
1 tablespoon vanilla extract
1 tbsp butter or coconut butter
1/4-1/2 cup almond milk
2/4 - 1 cup sweetener of choice
3-5 tbsp cocoa powderÂ
(optional) 1/2 tbsp. apple cider vinegar
â> blend together the cheese base, beets, butter, vanilla, cocoa, and if using, vinegar
â> gradually add in milk until youâre satisfied with consistency, then blend again. Then gradually add in sweetener, tasting every few to adjust the amount, then blend once more
â> pour to bowls, serve with crackers, fruit, etc.(note: if you want it less liquid-like, whisk instead of blending)
â> ENJOY! x

Healthy PB Balls!
Filling: ⢠3/4-1 cup smooth peanut butter (or any nut butter) ⢠few drops liquid stevia (or 2-4 tbsp honey, maple, or agave) ⢠1/3-1/2 cup coconut flour ⢠pinch of sea salt
Coating: ⢠1/2-3/4 cup dark chocolate chips ⢠1/2 tbsp coconut oil
â> in a bowl, mix the peanut butter with the stevia (or honey) and the sea salt. Gradually add in coconut flour until a cookie dough-y texture is achieved
â> line a pan with parchment paper, scoop out the dough with a mini scoop or a spoon. Refrigerate for 20-30 mins.
â> meanwhile melt the chocolate and coconut oil in any way you like (I used a double boiler)
â> take out the dough from the fridge and coat them in the chocolate layers, then leave them to set on the parchment
â> return to the freezer for 30 minutes before eating
â> ENJOY! x

HOW TO MAKE IT
â> Mix oats, nuts, seed, salt, spices (basically all dry ingredients) in a bowl
â> Add in the sweetener, and (optional) 4 tablespoons of oil, and nut butters/jam/whatever else youâre using
â>Stir well, then spread into a DEEP baking sheet
â> Bake at 300F for 45-50 minutes, stir at 30 minutes
â> Stop when granola looks toasty and smells good - it WILL NOT be crunchy/hard at first
â> Let it cool and harden completely then store in an airtight container (jar)
â> ENJOY! x
