Chilli mac and cheese
This is really simple and tasty recipe especially if you already know how to make chilli. Chilli is very simple you just need to cook your onions and meat (I use vegetarian mince) in with chilli powder and some other spices that you want (I used cumin seeds, a little bit of cayenne pepper and also a bay leaf) and then add chopped tomatoes, kidney beans and some veggies like pepper or sweetcorn.
Then to before you start simmering it and just after you have added everything else, add some pasta and a decent amount of water but not too much otherwise it will get too soupy. Then you pop the lid on and wait for the pasta to cook all the way through. Grate some cheese and plop that on top before you serve.
I got this recipe from a blog 2 years ago and can’t find it again so here are two really nice and simple recipes I found:

Damn delicious
Onions
OK this is so basic but, you need to actually cook your onions. Nobody likes a crunchy onion in their food so it's simple: wait for your onions to change in colour before adding any other ingredient. (Except cumin seeds because they taste amazing and I got a bag of 200g for 70p) The amount of times I've tried my partners food and my housemates food (also my food, I'm not ashamed) the onions have been God damn slightly toasted and fully crunchy. I hate it and it just ruins the meal. Obviously if you like a crunchy onion forget everything I've said and keep doing what you do.
mom: you need to learn how to cook for yourself
me:
Couscous with stuff
So I'm not quite sure where to start in regards to basic cooking so I'm just going to go through my own recipe of what I ate tonight.
Literally its just couscous with whatever you want thrown in. I used cucumber, a bell pepper and had a bit of hummus to go on top. I know hummus and couscous might not go but I like it.
You can use literally anything you have in your cupboards though. What I have done before is fry up some onions, bell peppers or even bacon (if you are a carnivore) and then add in the couscous and water and wait for the water to be absorbed. Its really versatile and pretty much any flavours go with couscous, it is quite bland on its own so make sure you put things with it like I put in garlic powder pepper and half a stock cube, (a whole stock cube for one person gets a bit too much in my opinion)
This is probably the quickest warm light meal you can make.
Also my housemate had some leftover jalapeños from when he made burritos so I snagged a few of those. I like spicy things so I also added some sriracha (chilli sauce) which I bought a couple of weeks ago.
ingredients:
couscous
1/2 stock cube
pepper
garlic powder
cucumber
red bell pepper
hummus
jalapeños
sriracha
method:
Boil the kettle with as much water as you need (you don’t want to waste electricity unnecessarily, that shit costs money!) Then pour the boiled water over a bowl or container with the couscous in (I used a tupperware box today because my partner won’t do our washing up) I would say you need enough water to cover the couscous and then some.
Stir in the pepper, stock cube and garlic powder with a fork then cover.
Whilst your couscous does its thing (is there a technical term for when couscous fluffs up?) chop up your cucumber, bell pepper and jalapeños.
Fluff the couscous with your fork and if it fluffs into bits then your golden, if not you may have to drain the excess water and try less next time. You know when couscous is done when its not crunchy anymore.
Throw your veg in with your couscous then top it with the hummus and sriracha.
Hello!
I am a 20-year-old part time student living with other students who are roughly the same age as me (they all happen to be male as well) and I have noticed one thing:
Young people do not know how to cook!
Even with the most basic shit like how much oil to use, or how to cook rice or how to add flavour to your food. How has this information surpassed the generation I live in?
So I have created this blog to help young people and students on how to cook with very little income and still make it kinda healthy but yummy.
I probably won’t be reblogging much just mainly posting ideas, basic cooking skills, tips and stuff I’ve been eating. Also I don’t have a very good camera so prepare for some shitty photography.
Also I am a vegetarian but my partner is not so there will be the majority vegetarian stuff but meat will also be a thing occasionally.
