You can enjoy these tasty keto lemon bars that are low in carbs, gluten-free, and full of lemon flavor. If you're following a ketogenic diet, these are a great treat to satisfy your sweet tooth.
Ingredients: 1 cup almond flour. 1/4 cup powdered erythritol. 1/4 teaspoon salt. 1/4 cup butter, melted. 3 large eggs. 3/4 cup powdered erythritol. 1/2 cup fresh lemon juice. 1 tablespoon lemon zest. 2 tablespoons coconut flour. 1/4 teaspoon baking powder. Powdered erythritol, for dusting optional.
Instructions: Warm the oven up to 175F 350C. Melted butter, 1/4 cup of powdered erythritol, salt, and almond flour should all be mixed together in a bowl. Put it in the bottom of an 8x8-inch baking dish that has been greased. 12 to 15 minutes, or until the crust is just beginning to turn golden. Take it out of the oven and let it cool down a bit. Add the eggs, 3/4 cup of powdered erythritol, lemon juice, and lemon zest to a different bowl. Use a whisk to mix the ingredients well. Mix in the baking powder and coconut flour with a whisk until the mixture is smooth. Spread the lemon mix on top of the baked crust. Bake for 20 to 25 minutes, or until it's set. After letting it cool completely, put it in the fridge for at least an hour before cutting it into bars. If you want, you can sprinkle powdered erythritol on top before serving.
