Ingredients: 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces. 2 lemons, juiced and zested. 3 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon dried oregano. 1/2 teaspoon ground cumin. Salt and pepper, to taste. 1 red bell pepper, cut into chunks. 1 red onion, cut into chunks. Wooden skewers, soaked in water for 30 minutes.
Instructions: In a bowl, combine the lemon juice, lemon zest, minced garlic, olive oil, dried oregano, ground cumin, salt, and pepper. Mix well to create the marinade. Place the chicken pieces in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it's well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours, to marinate. Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto the soaked wooden skewers, alternating with chunks of red bell pepper and red onion. Place the chicken kebabs on the preheated grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
