Open source thermocycler for PCR (a technique to amplify DNA) running on a Mac. These retail for $600, making PCR reasonably affordable for small science projects and classrooms. The thermocycler arrives in a kit and you can apparently assemble it in under 3 hours.
International Barcode of Life
The International Barcode of Life project uses DNA barcodes, a short section of DNA from a standardized region of the genome, to identify different species. The code is analogous to way a supermarket scanner uses the black stripes of the UPC barcode to identify purchases. This is one of my favourite biology projects right now. http://ibol.org/
