Vegan Strawberry Banana Bread Adapted from Instructables.com
Ingredients 1 cup whole wheat flour 1/4 cup oatmeal 1/4 cup sugar 1/8 cup light brown sugar 1/2 teaspoon baking soda 1 teaspoon cinnamon A little less than 1/2 cup unsweetened applesauce A little less than 1/4 cup agave 1 teaspoon vanilla extract 1 old, frozen banana (mashed) 1/2 ripe banana (sliced) 1 cup strawberries (diced) Directions 1. Preheat the oven to 350 F 2. Prepare a loaf pan by lining it with foil, allowing for overhang to easily lift out the bread. 3. In a large mixing bowl, combine flour, sugar, brown sugar, baking soda, and cinnamon. 4. Add in the mashed banana and stir. 5. Add the applesauce, vanilla, and honey and stir until just combined. 6. Gently fold the strawberries into the batter and stir again. 7. Pour the batter into the loaf pan. Top with the banana slices, pressing them very gently into the surface of the batter. 8. Bake for 45-50 minutes or until toothpick inserted comes out clean. 9. Allow bread to cool before removing it from the pan
Never baked with agave before! I just bought a ton of it... Maybe it will help me with my honey addiction.
Syrian Bread
Ingredients: Whole wheat flour White flour Salt Pepper Yeast Lukewarm water Honey Olive oil Butter
Directions: 1. Mix together 1/3 whole wheat flour with 2/3 white flour in a large bowl. 2. Pour water into a pan or bowl. Spoon in several tablespoons of yeast, stirring occasionally. 3. Activate the yeast by pouring honey into the pan. 4. Add salt and pepper to the large bowl of flour. 5. After the yeast has de-clumped, pour the mixture into the flour, stirring rapidly. 6. Knead the dough until it doesn't stick to your fingers (You may have to add more flour). 7. Heat the oven for a few minutes, and then turn it off. Cover the bowl of dough with a cloth and place the entire thing in the oven. 8. Wait for it to rise. Once it has risen, remove the dough from the oven. 9. Cut off fist-sized pieces with a knife and shape them into rolls. Rub olive oil onto a baking sheet and place the rolls onto it. 10. Place them back into the oven for the dough to rise a second time. 11. Remove the baking sheet and use a fork to poke several holes in each role. Preheat the oven to 450 F. 12. When the oven is ready, place the baking sheet into the oven and wait 15 or so minutes (You will probably have to check on them). 13. When they are lightly browned, remove the rolls and immediately spread butter on them. Allow them to cool.
ENJOY! They taste super good with butter and strawberry jam. (Also I probably forgot a lot of steps... I'll come back to this when I remember more)
Oatmeal Muffins with Cranberries, Pecans, and Chocolate Chips Adapted from the Brown-Eyed Baker
Ingredients: 1 cup oat bran 1 cup all-purpose flour 1/2 cup light brown sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/4 cup chopped pecans 1/3 cup chocolate chips 1/3 cup dried cranberries 1/2 cup unsalted butter, melted and cooled 1 cup buttermilk (I found a really good kind with butter flakes still in it!) 1 egg 1/2 teaspoon vanilla extract
Directions: 1. Preheat oven to 400 F. Grease a 12-cup muffin pan, 2. Mix dry ingredients together in a large bowl. Stir in the pecans, chocolate chips, and cranberries. 3. Mix wet ingredients together in a medium bowl. 4. Add wet ingredients to dry ingredients, stirring as you mix. Make sure batter is evenly mixed and moistened. 5. Divide the batter into the 12-cup muffin pan. Bake for 15 to 17 minutes. Cool in pan for five minutes and then transfer muffins to a cooling rack or plate. YUM!
