Ingredients:
8 eggs;
A handful of thinly sliced mushrooms;
½ bell pepper, chopped;
1 red onion, chopped;
2 garlic cloves, minced;
10 oz. chopped spinach;
4 to 6 oz. great quality pancetta cut into slim shapes;
Cooking fat;
Ocean salt and newly ground dark pepper;
Preparation:
Preheat your stove to 450F.
Melt 1 tbsp. of cooking fat in an extensive skillet set over a medium-high warmth.
Mix in the red onions and garlic and cook until delicate (around 4 minutes).
Include the mushrooms and bell pepper and cook until delicate and tender (around 5 minutes).
Mix in the spinach and cook for an additional couple of minutes, until the greens are withered, and season to taste with salt and pepper.
Spread the vegetables equally over the base of a heating dish.
