These mini nacho pizzas are a vegan twist on a classic favorite. They are perfect for parties or as a fun appetizer for any occasion.
Ingredients: 1 cup refried black beans. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup sliced black olives. 1/2 cup sliced jalapenos. 1 cup vegan cheese, shredded. 1/4 cup chopped cilantro. 24 round tortilla chips. 1 avocado, diced for garnish. 1 lime, cut into wedges for garnish.
Instructions: Preheat your oven to 375F 190C. On a baking sheet, arrange the tortilla chips in a single layer. Spread refried black beans evenly on each chip. Top with diced tomatoes, red onion, black olives, jalapenos, and vegan cheese. Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly. Remove from the oven and sprinkle with chopped cilantro. Serve hot, garnished with diced avocado and lime wedges.
