These blueberry breakfast cupcakes made with whole wheat are a great way to start the day. They are healthy and tasty because they are full of whole grains, fresh blueberries, honey, and bananas, which give them their natural sweetness.
Ingredients: 1 1/2 cups whole wheat flour. 1/2 cup rolled oats. 1/4 cup ground flaxseed. 1/4 cup honey. 1/4 cup unsweetened applesauce. 1/4 cup plain Greek yogurt. 1/4 cup almond milk. 2 ripe bananas, mashed. 1 egg. 1 teaspoon vanilla extract. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon cinnamon. 1 cup fresh or frozen blueberries.
Instructions: Start by heating the oven to 350F 175C. Put the ground flaxseed, whole wheat flour, rolled oats, baking powder, baking soda, and cinnamon in a large bowl. Mix the Greek yogurt, honey, mashed bananas, egg, and vanilla extract in a different bowl using a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Be careful not to mix too much. Add the blueberries slowly and carefully. Put cupcake liners in a muffin tin or grease the cups a little. Fill up each muffin tin cup about two thirds of the way to the top with batter. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Take the cupcakes out of the oven and let them cool in the pan for a few minutes. Then, move them to a wire rack to cool completely. Have fun with your blueberry whole wheat cupcakes for breakfast!

Instructions: Put blueberries, coconut milk, Greek yogurt, and honey in a blender. Mix until it's smooth. In a glass, pour half of the mix. Using the blender, add the shredded coconut to the rest of the ingredients and blend until everything is well mixed. Pour the coconut mix on top of the blueberry mix in the glass. If there is any mixture left over, add ice cubes to the blender and blend until the mixture is smooth. Pour the mixed ice over the smoothie that is already in the glass. If you want, you can add more shredded coconut and blueberries as a garnish. Serve right away and enjoy!

Heat oil in a deep pan or deep fryer to 350F 175C. Drop spoonfuls of the donut batter into the hot oil, using a spoon or a piping bag for a neater shape. Fry the donuts until they are golden brown, about 2-3 minutes per side. Remove the donuts from the oil and drain on a paper towel-lined plate. Dust the warm donuts with powdered sugar and garnish with additional blueberries if desired. Serve the blueberry cream cheese donuts warm and enjoy!

This helps prevent them from sinking to the bottom of the muffins. Gently fold the blueberries into the muffin batter. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
