Simple and Easy Traditional Christmas Cake Recipe
Christmas is almost here and we all are excited to welcome a new year with a great feast. Just to make your Christmas a bit more special this year, we came up with an easy traditional Christmas cake recipe which you haven’t tasted it yet.
So, let’s get started with the perfect fruit cake recipe and complete the classic Christmas treat.
Ingredients to make classic Christmas Fruit Cake
1. 1 1/2 cups or 225-grams golden raisins/sultanas
2. 3 1/2 cups or 525-grams currants
3. 1 1/2 cups or 225-grams raisins
4. 3/4 cup or 110-gram mixed candied peel (finely chopped)
5. 3 1/3 cups or 300-grams plain flour
6. 1 cup glace cherries (halved)
8. 6 large eggs (lightly beaten)
9. 1/2 level teaspoon ground cinnamon
10. 1/2 level teaspoon mixed spice
12. 10 ounces/300 gram butter (slightly softened)
13. 1/2 level teaspoon freshly ground nutmeg
14. 1 1/3 cups/300 gram soft brown sugar
15. 3 tablespoons brandy (plus extra for feeding)
Step by step method to bake Christmas Fruit Cake
1. Get all the ingredients ready first.
2. Heat the oven to 300 F/150 C/Gas 2. Keep the temperature low because it will be a long and slow baking process. The cake will be packed with fruits, sugar, and brandy, so the temperature should be low or else the outer part of the cake will burn and it will be undercooked from inside.
3. Stripe a 9-inch cake tin with 2 thickness of parchment or greaseproof paper. Now tie a double band of brown or newspaper paper in the outer part of the cake tin. By covering the cake tin, it will prevent the cake from burning.
4. Take a large bowl and add sultanas, currants, raisins, peel, and cherries with the flour, spice, and soul. Mix it well to make a proper mixture.
5. Take another bowl to cream the butter with the sugar until it will become light and fleecy. Now mix the lemon zest and add the beaten eggs on it and stir it well until you get a perfect blend. Don’t rush this process because if you will not stir it properly, your mixture could get curdle and can spoil your efforts. If it is making curdle then mix some flour on it to bring the mixture back together.
6. Blend the half of the flour and fruit in the egg and butter mixture, mix it properly. Lastly, add the brandy in the mixture.
7. Now put the cake mixture into the cake tin while making sure that there is no air gap. Once the cake tin surface is filled make a slight dip in the centre (it will allow the cake to rise and will create a smooth surface for icing the cake) by using the back of the spoon.
8. Take a clean towel or tissue to clean up the smears of cake batter on the greaseproof cover. If you will leave it without cleaning then it won’t affect the cake but it will not smell good. So, better clean it before putting it in the microwave.
9. Now put the cake batter in the microwave to cook for 4 ½ hours. Once it is cooked, you can check whether the cake is cooked or not by inserting a toothpick in the centre of the cake. If it will come out clean then it is cooked, you are done and if not it is undercooked, you have to cook it for few more minutes.
10. Once, the cake is cooked leave it to cool in the tin on a wire rack for an hour at least and then remove the cake from the tin. Again leave the cake to cool separately, when it cools down prick the surface of the cake with a fine metal needle and slowly pour above 2 – 3 teaspoons brandy. Keep feeding it repeatedly until Christmas will come.
11. Store the cake in an airtight tin by covering it with greaseproof or parchment paper.
