You dont need pasta sauce to eat pasta
this might seem like a silly thing to say, but once you accept the truth that pasta is a flavor vehicle and that any sauce is good, its very freeing. dont have tomato sauce? Well you have 3 unopened bottles of hickory smoke bbq sauce dont you? You have mayo and franks. Oh it says “burger sauce” on the bottle? Wrong, its going on linguini. You have ketchup? Dont be a coward. Drench those macaroni noodles in sweet red goo. Mix in some fake american cheese while youre at it. You dont even need sauce. Just grab those wet floppy noodles by the handful and shove them down your gullet like the gremilin you know you are. Hell, do you even need to cook it? just grab that dry pasta and get crunching slut.

Spanish Monkfish
PREP TIME: 5 minutes COOK TIME: 25 minutes Home cooks in Spain know that it's easy to put a quick and tasty meal on the table by using flavorful basics — garlic, tomatoes, parsley, and saffron — and simple technique. Following their philosophy and style, we created this delicious, no-fuss dish. Serve it with a salad or, in later phases, Nutty Brown Rice.
1 tablespoon plus 2 teaspoons extra-virgin olive oil, divided
2 garlic cloves, thinly sliced
1 (14-ounce) can diced tomatoes
¼ teaspoon powdered saffron
1½ pounds monkfish or halibut fillets
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper
Heat oven to 425°F. Heat 2 teaspoons of the oil in a small saucepan over medium heat. Add garlic, reduce heat to medium-low, and cook 2 minutes. Add tomatoes with juice, saffron, and a pinch of salt and pepper. Simmer 20 minutes. While sauce is cooking, brush fish with remaining oil and season well with salt and pepper. Bake until just opaque in the center, 12 to 15 minutes. Add parsley to sauce, season to taste with salt and pepper, and remove from heat. Spoon over fish and serve.

Today I made homemade croutons, I haven’t done this in forever but I really fancied adding it to my salads and soups this week. So, I’ve made a big batch to get me through the week. This is such an easy recipe to make, I’ve added the recipe below for you. Let me know what you think if you do make these delicious homemade croutons.
Homemade Croutons recipe
Ingredient’s
6 slices of fresh crusty white bread
1 clove of minced garlic
70mls of extra virgin olive oil
2 teaspoons of Italian seasoning herbs
1/8 of a teaspoon of sea salt (a pinch)
1/8 of a teaspoon of black pepper (a pinch)
3 tablespoons of parmesan cheese (optional)
Method
First preheat your oven to 170 degrees.
Slice up 6 slices of fresh crusty white bread leaving the crusts on.
Cut each slice of bread into about 1cm cubes and lay them onto a large baking sheet.
Now grab yourself a bowl and add 1 clove of mince garlic, 70mls of extra virgin olive oil, 2 teaspoons of Italian seasoning herbs, 1/8 of a teaspoon of sea salt (or a pinch) and 1/8 of a teaspoon of black pepper (or a pinch) and mix them all together.
Drizzle the oil mixture over the top of the cubed bread, now using the tips of your fingers start turning the cubes making sure that each one is well covered with oil and herbs.
Lay them back out on your baking sheet, so they are a single layer again.
Pop them into your preheated oven for 5 minutes, after 5 minutes take them out and turn the cubes over and put back into the oven for another 5 minutes.
After another 5 minutes take them out turn once more and sprinkle your parmesan cheese over the top of your croutons and put back in for the last 5 minutes.
Once golden brown, take your croutons out of the oven and let them cool.
If you store them in an airtight container, they will last up 4-5 days.
Croutons go well with all sorts of salads and even goes great with a creamy tomato soup.
