this soup was GREAT! couple things:
1) I had FARRO on hand, so I substituted it for the spelt.
2) found myself without tomato paste, so I pureed 2 tomatoes and then sauteed the sh** out of them, until ALL the liquid was gone and LO AND BEHOLD!!! tomato paste! (who knew??!?) (that's the tomato pic above!!)
3) I used water instead of chicken broth
4) pancetta is like an Italian style bacon

GRILLED ASPARAGUS
FIRST: start your grill!
THEN:
Get some asparagus.
SNAP the ends off
BOIL them for ONLY one minute - seriously. otherwise they are stringy and mushy and taste like crap!
take them out of the water and put them a 9X13 pan and cover with EVOO (not too crazy or you'll burn your brows off when you put them on the grill!)
then sprinkle some kosher salt on them
then BBQ them up until they are crisp to your liking!

hey! this was delicious! and not spicy at all. tons of greens! spinach, kale, and arugula! I opted to OMIT the anchovies. And you can get parmesan rinds from the grocery - just ask them, and if your store has a cheese shop, they'll have them for sure!
ONE EYED JACKS a.k.a.: EITHER eggs or birds in a nest...
the story behind this is that in the winter of 2012 I cooked for my dear friend for all the holidays (the mister was out of town, and her luv had just recently (RIP) passed) so I cooked. For 40. After the dinner had been served and cleaned up (while they opened gifts) one of the nephews (10 years old-ish) came into the kitchen and asked me, and now mind you, he'd never met me, so I'm thinking he thinks I'm the "help" -
him: "DO YOU KNOW HOW TO MAKE EGGS IN A NEST?"
me: tell me what they look like
him: eggs you put in bread and cook.
me: why yes I do! at my house we call them one eyed jacks.
him: I want one.
me (thinking) there are 40 post-dinner-possibly-hungry-gift-opening-people here.
what I said: go do a head count of how many want an egg in a nest...
(pause)
him: 20
and the above is what happened.
Don't over think it! if you have a recipe for this, make it! If not, well, here ya go:
I'm tellin' ya how to make ONE, you will REPEAT for however many you need to make!!! And it's a lot more fun if you have a bloody mary whilst doing so. just sayin'
DO THIS:
take a piece of bread.
find a cup that is smaller than said bread and use it to cut the hole
save the piece you cut out
put the HOLE bread in a pan with some oil, crack an EGG in the HOLE in the bread, cook, and flip, to your liking. cook the HOLE piece you cut out too.
Personally, I like about THREE of these on a plate SMOTHERED with syrup and tabasco.
THREE BEAN SALAD
FYI to newbies: you MUST make this the day before and let it sit in the fridge overnight. Covered. Stir VIGOROUSLY before serving and put it in a pretty bowl for cryin' out loud.
When I saw the amount of sugar in this I almost shit! I searched (lazy!) for a link to the JOY OF COOKING recipe but couldn't find one, so hold on while I top off my glass and type it out.
And for cryin' out loud. Go get this cook book already!
1 can of green beans
1 can yellow wax beans
1 can red kidney beans
(PS: rinse all of these canned beans, and DOUBLE everything if you are serving more than 6!!!!)
1/2 c chopped green bell pepper
1/2 c chopped onion (white, yellow or purple, your choice!)
NOW:
whisk together in a small bowl:
1/2 c veggie oil
1/2 c red wine vinegar
3/4 c sugar
1/2 tsp dried tarragon
1 tsp salt
1/2 tsp black pepper
POUR this yummy dressing over all the beans, toss to coat. Cover. Chill overnight. Stir before serving. AND PUT IT IN A PRETTY BOWL! That pic is the STIRRING bowl!!
AMY'S SALSA
You will never buy anything ever again. It's so easy:
3 tomatoes
1 green bell pepper
1 jalapeno
1/2 red onion
1 clove garlic
a shake or 2 of garlic powder
juice from 1 lime
1/2 bunch of cilantro (or more to taste)
salt to taste
Put ALL of this in your food processor and pulse blend until it looks like the pic. Then add more of whatever you think it needs and serve with guac and chips!
BBQ grilled artichokes and the Susan Hay grilled tuna recipe!
Coriander, sesame, lime tuna skewers from Donna Hay's Seasons cookbook. First time I'm trying this one!! The marinade smells SO GOOD!!!
Grilled Artichokes
cut the tips off the leaves
trim the stem
boil the shit outta them in salted, garlicked, lemon water for about 30-50 minutes. but don't over do it either, you don't want them all falling apart, but if you don't cook them long enough the leaves stay too hard. they are ready when you can stick a knife in the bottom of the stem and it goes in smooth.
now let them cool.
now cut them in half.
carefully scoop out the hairy part.
drizzle with EVOO and good salt
toss them on the grill and keep turning them until they are crisped to your liking.
serve with mayo or butter for dipping. but truth be told, usually the EVOO and salt is all it needs! enjoy!
BRUSSELS WITH BACON (bacon optional)
GET THIS:
brussell sprouts (buy however many you need for who you're feeding)
bacon
EVOO
salt
DO THIS:
cook the bacon then cut it all up, set aside
chop the brussels or shred them in your food processor
ROAST the brussels, meh, about 350* for about 30 min but watch and squish them around the whole time. DON'T BURN THEM! but you still want them kinda crispy!
AFTER they're done, in a pan over med heat, mix the bacon and the brussels to bring them to a nice hotty hotness
Dump in a bowl to MIX
But for cryin' out loud put them in a pretty bowl to serve.
