I rise from the dead after three years...in a new fandom

So I started watching Gilmore Girls a couple of months ago, hooked me and my partner right away, currently on season 5, and I have a question for my fellow fans : do you think that the show has aged well?

I keep commenting with my partner while watching, and we find some plot points very difficult to understand: Emily as a whole, how she ruined Lorelai's relationship with Luke, the evolution of Rory into adulthood, and most especially, the lack of character development through the show. What are your thoughts?
