The tart lemon flavor and rich olive oil flavor in these Lemon Olive Oil Muffins go so well together. They are soft and moist, and you can eat them for breakfast or as a sweet treat at any time of the day.
Ingredients: 2 cups all-purpose flour. 1 cup granulated sugar. 1/2 cup extra-virgin olive oil. 2 large eggs. 1 cup buttermilk. 1 lemon zest and juice. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 teaspoon vanilla extract.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the olive oil, eggs, buttermilk, lemon zest, lemon juice, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are a few lumps. Fill each muffin cup about 2/3 full with the batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
