Ingredients: 2 cups grated carrots. 2 cups grated zucchini. 1 can 15 oz chickpeas, drained and rinsed. 1/2 cup chickpea flour. 2 cloves garlic, minced. 1/4 cup finely chopped fresh cilantro. 1 teaspoon ground cumin. 1/2 teaspoon paprika. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 2 tablespoons lemon juice. 2 tablespoons olive oil.
Instructions: Put grated zucchini and carrots, chickpeas, chickpea flour, minced garlic, chopped cilantro, ground cumin, paprika, salt, black pepper, and lemon juice in a large bowl. Mix the ingredients together well with your hands until they are all mixed in evenly. Set a pan on medium heat and add the olive oil. Make little patties out of the mixture and put them in the pan. For about four to five minutes on each side, or until golden brown and crispy, remove from the heat. Take the fritters out of the pan and put them on a plate with paper towels on it to soak up any extra oil. Get the carrot zucchini chickpea fritters hot and serve them with your favorite dipping sauce. You can also eat them plain.
