Lamb lollie pops, lemon couscous, mexican street corn and asparagus. All Pat. He done good.
Boneless chuck steak, potatoes o'brien and Asian medley vegetables.
Pork ribs, broccoli, mashed potatoes ( cheated Bob evans), and cesear salad.
Banana Muffins with Cream Cheese Frosting
Stuffed cornish hens and broccoli
Make 1 to 2 boxes of chicken rice-a-roni.
Stuff 2 cornish hens with the rice mix in a casserole dish. Sprinkle some seasonings on the hens, I used thyme, basil, oregano and adobo (goya, red cap) 350 F oven for 60 to 90 minutes uncovered. Cook till hens are about 175 F.
Broccoli, sautee medium heat in a large frying pan with olive oil, use 2 TBs at a time. Sprinkle with Adobo goya seasoning, a pinch of red crushed peppers and black pepper. Sautee till it starts browning then lower heat to low, cover and cook till tender. Add more olive oil if needed.
CREAMY SAUSAGE TORTELLINI SOUP
I use low sodium chicken broth, the sausage is salty enough for us. (And I am salt lover, Pat is black pepper lover)
I use half hot and half italian sausage package.
Only use fresh or frozen tortellini otherwise dry pasta will soak up all the broth.
Delicious!

Pork tenderloin, beets and radish medley, spiced cauliflower and mashed potatoes.
Pat's TURKEY POTATO HASH
NEW ENGLAND CLAM CHOWDER
Make on a weekend and enjoy soup for a few days.
•6 strips of turkey bacon ( you can use regular bacon) chopped
• 1 jar of clam juice
• 1 1/4 lbs of washed, peeled and diced golden yukon potatoes
• 3-5 garlic cloves, minced
• 2 stalks of celery, finely chopped
• 1 large onion, finely chopped
• 1 -2 TB butter
• 1/3 cup of flour
• 2-3 bay leaves
• 1 tsp dried oregano
• 1 tsp dried thyme
• 1 tsp dried parsley
• 1 cup heavy cream
• 2 1/2 cups of chicken broth
• 1 lb fresh clams with the juice from the fish market
OPTIONAL: 1/4 tsp of crushed red pepper flakes
~ In a 5 quart dutch oven cook bacon over medium heat till slightly browned. Remove bacon, place on a paper towel lined plate, melt butter over medium heat. Add celery and onions and saute about 6 to 8 minutes.
~ Add potatoes, garlic, (optional red pepper flakes) saute 30 seconds to 1 minute. Sprinkle with flour and cook 1 to 2 minutes. Stir in chicken broth, clam juice, bay leaves, thyme, and oregano. ( you can add more broth if you added more potatoes) Bring to a boil.
~ Reduce to a simmer, uncovered for about 20 minutes, till potatoes are tender.
~ Stir in heavy cream and fresh clams, bring to a simmer. Add bacon and remove from heat, add parsley and cover. Let sit for 5 minutes for clams to cook. Remove lid, very hot! All done!
Serve with oyster crackers or grilled cheese sandwiches.
PORRIDGE
PORRIDGE is a great meal if you had oral surgery, stomach surgery or for winter breakfast day! Farina has a lot of iron, vegetarians can eat this for that benefit alone.
-4TBs farina
-1 cup milk
-1 TB butter
-pinch of salt
-1/2 tsp vanilla extract
Optional: handful of blueberries or sliced banana or pinch of cinnamon and sugar or rasins
Using a small pot, add milk, farina, salt, vanilla. Heat till just boiling, lower to medium heat. Stirring for about 1 to 2 minutes. Until it starts to thicken. Immediately remove from heat. Pour in a bowl and add butter, stir in any optional toppings. ( I love blueberries or sliced bananas)
NO BAKE BLUEBERRY CHEESECAKE PARFAIT FOR TWO
-1 cup of fresh blueberries ( or strawberries cut up)
-5 TB sugar
-1 TB lemon juice
- 3 TBs of heavy or light cream
- 9 squares of crushed Graham crackers
-4 TB of butter (1/2 a stick)
-16 oz of room temperature cream cheese
-1 TB vanilla extract
-1/4 cup of cottage cheese( friendship 2% pot style)
Crush graham crackers in food processor. (I use a pull string chopper, Kuhn Riken Swiss) set aside in a small bowl.
Melt the butter in a small pot. Pour over the crushed crackers. Mix till well combined. Set aside.
Next, get out your stand mixer or hand mixer. Add the cream cheese, sugar, lemon juice, milk cream, vanilla, cottage cheese.
Use the wisk attachment on high speed for 2 minutes. Bring it down to medium speed for 1 minute. Taste if you can feel granules of sugar put on a little longer.
Get out 2 bowls ( I use my glass salad bowls)
And evenly put a layer of cracker mix in both bowls, reserve 2 TBs. Then, add the cream evenly in both bowls. Top with 1/2 a cup of blueberries in each bowl and spinkle 1 TB of cracker mix in each bowl.
Enjoy! You can cover and fridge this for 2 days or so. Or top with whipped cream.
