One of my favorite things are left overs that taste even better than the the day they were made. These Tex-mex spiced lentils are exactly that. I made a big skillet full earlier in the week, and I'm enjoying it today with organic brown rice & quinoa with a tomato salad... SOooo GOOoood!... While my boys are enjoying it on top of nachos.
