Basic Pizza Sauce
This is the recipe for the basic marinara pizza sauce we use on most of our pizzas. 3 cans of cherry tomatoes (or San Marzano tomatoes if you can find it) 3 cloves of garlic 1 tbs olive oil a pinch of salt Mix everything into thick sauce in a blender. Cook the sauce in pressure cooker under high pressure for 50 - 60 minutes.

This is the secret recipe for creating the prefect pizza crust a home. It will make 4 regular medium sized pizzas. 500 g flour (preferably tipo “00″) 10 g salt 10 g agave syrup (or sugar) 3 g dry yeast 3 g gluten flour 310 ml lukewarm water Some cornmeal Mix everything except the water and cornmeal in a bowl. Gradually start to mix in the water and make sure everything combines well and there are no traces of flour left. Knead it by hand for a while. Let in rise for 10 minutes. Split the dough into four equal pieces and make them into balls and cover them in a bit of olive oil and set them aside under a layer of plastic or cloth to rise for at least 1 hour. Stretch out and shape the pizzas by hand while using cornmeal to preventing it from sticking. The cornmeal also adds a nice crunchiness to the crust and is much easier to clean away than wheat flour. Add pizza sauce and desired toppings and bake it in an preheated oven with a pizza steel (or stone) at maksimum heat (280° C or more if possible) until it looks done and the crust has started to brown (usually 2-5 minutes). To get even more heat out of the oven it can be a good idea to turn the grill feature on while baking the pizza.
