Ingredients: 1 lb ground beef. 1 onion, chopped. 1 bell pepper, chopped. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn kernels, drained. 1 can 10 oz diced tomatoes with green chilies, undrained. 1 packet taco seasoning mix. 1 cup shredded cheddar cheese. 1 cup shredded Monterey Jack cheese. 1 cup crushed tortilla chips.
Instructions: Before you start cooking, heat the oven to 375F 190C. Put ground beef, onion, and bell pepper in a large skillet. Cook over medium-low heat until the beef is browned and the vegetables are soft. Get rid of extra fat. Don't forget to mix in the taco seasoning mix and black beans. Stir every now and then for 5 minutes. Put the beef mixture into a 9x13-inch baking dish that has been greased. Shred cheddar cheese, Monterey Jack cheese, and crushed tortilla chips on top. Put it in an oven that is already hot and bake for 20 to 25 minutes, or until the cheese melts and bubbles. If you want, you can serve it hot with chopped cilantro or sliced green onions on top.

Salt and pepper to taste. 8 small flour tortillas. 1/4 cup olive oil. 1 cup grated Monterey Jack cheese. 1/4 cup milk. 1/4 cup diced tomatoes. 1/4 cup diced green onions. 1/4 cup chopped jalapeos. 1/4 teaspoon chili powder.
Instructions: Warm up the olive oil in a big pan over medium-low heat. Put in the diced onions and cook them until they turn clear. Add the chopped red and green bell peppers and stir them in. Cook for a few minutes until the peppers get soft. Ground cumin, garlic powder, onion powder, salt, and pepper should all be added. Toss the chicken with the spices and cook until it's hot all the way through. Add sour cream and diced green chilies and mix them in.
