So it's not the most attractive food, but Appetite for Reduction's "Lotsa Veggies Lentil Soup" was really tasty. Lots of flavor and very filling! I'm not ready to give up on this cookbook, so tonight I tried But I Could Never Go Vegan's (by Kristy Turner) "Creamy Mushroom Fettuccine Alfredo." While the sauce is a really good consistency, it's bland AF. I found myself continually adding salt but nothing seemed to happen. Maybe there is something wrong with my tastebuds. As written, my rating: 5/10. If I made it again, I'd add more wine, more garlic, more mushrooms, a bit of sweet onion, and maybe something sharp like sun-dried tomatoes. I picked up some new vegan cookbooks, and I'm bursting with opinions. First up: But I Could Never Go Vegan's (by Kristy Turner) "BBQ Jackfruit Fajitas with Guacamole." I've never even heard of jackfruit before, but off I go to Wegmans and there it was. It's.... strange. Perhaps it is an acquired taste. But even bathed in a tasty BBQ sauce and broken up with peppers and onions... I had a tough time getting it down. It didn't bother my husband (who I cruelly hid my reservations from) so maybe it's just me. The fact that it's about 40 calories per serving certainly makes it worth trying to like. As for the guacamole... It was alright. Not my favorite guacamole recipe, but I'd be lying if I said I was super discriminate regarding guacamole. 😏 My rating: 4/10. So does anyone else have a to-do list that's 9 days long?? Whatcha got happening? Make me feel better!! I've got Target, printer installation, orders, sugar scrubs, bath bombs, a wholesale delivery, another wholesale testing phase to get done, new product tests, about 200 labels to apply (not exaggerating!), a parent-teacher conference, phone calls to make, meal plans, blog outline, email template updates, and laundry.
