Yes indeedy! The time has come for yet another fundraising walk. I will be doing the usual 24 miles this November all in aid of raising funds for Pancreatic Cancer UK.

Today is the final day of my efforts! But don’t worry, you can still get any further donations in by the 2nd of December if you plan on donating.
So, today is the final day of my walking for Pancreatic Cancer and I have done 40 miles out of the original 24 that was promised! Woo! I tried my best and I admit it was tough with the current state of the weather here and my health issues, but I doubled my efforts!
So far I have collected £29.22 out of the £100 goal.

Ekströms Nyponsoppa - A rosehip drink that is great warmed up during winter. Its packed with vitamins.
Karl Fazer Chokladpraliner - These are some of our favourite chocolates. The last time we got to eat any we were in the hills at night near Saariselka enjoying a horse sleigh ride before heading home. Greatly missed these!
ABBA Earl Grey Citrus & Honung - We haven’t tried these, so it’ll be fun to see what they are like. We adore Herring and Earl Grey, so fingers crossed they are as good as they sound!

Fiskisúpa for food tonight!
(With a few non-traditional ingredients, but it’s to my taste, so shh! Don’t kill me! XD )
1 hour (Roughly) of prep and cook time.
Smoked haddock
Icelandic cod
Salmon
Dill
Salt
Pepper
Onions
Leeks
Potatoes
Carrot
Tomato puree
Chopped tomatoes
Port wine or sherry
Stock (Supposed to be vegetable stock, but I ate all mine so I used chicken stock)
Cream
Water
Butter
It’s pretty easy to make so long as you can get some fish. Just salmon works if you can’t get any of the other fish. If you can’t get port, sherry works great as a replacement.
Chop and cook onions and leeks in butter in a large pan. Once softened nicely, deglaze the pan with some port/sherry (Depending on which you are using) and add stock, tomato puree, herbs, salt and pepper and top with water.
Bring to the boil and add your potatoes and carrtots and let simmer until softened a little, but not all the way. Add chopped tomatoes and simmer down a little until veg is completely cooked. Add fish and gently simmer.
Add the cream right at the end, stirr and simmer very gently so you avoid it splitting.
Serve with crusty buttered bread and an Akvavit made from dill, anise, or angelica. Salmiakki, Ouzo and Pernod work fine.

WARNINGS:
Vegetarians/Vegans beware - I cook, prep and strip a chicken.
Cooking jerk chicken with greens. I also show you how I dismantle a chicken ready to make stock with.
This one chicken can make 3-4 meals. The jerk chicken now, then peri-peri with some of the leftovers. The rest will go into the finished stock made from the bones and skin. This stock can be used as a base for many things, but I will be making a soup with added meat, leftover broccoli stalk (The part that so many people waste) and carrot and dumped over mashed potato.
If I have any leftovers after that, I will add the leftover jerk sauce and create a spicy soup.
Ta-daaaa! All done. Now to scoff it. Hohoho.
