I've been grilling the better part of 30 yrs (gas and charcoal). I started smoking meats the last two years. The BEST advice a pitboss gave me for smoking meats was not only "low and slow" along with "if you keep lookin'.... it ain't cookin" was......... MOISTURE. So allow me to share with you: Place a large aluminium foil pan under your meat in the smoker. Add......water, bacon grease, lard, fresh herbs, sliced apples, limes, lemons and anything else you enjoy. I can't say you'll actually taste these ingredients in your meat but it WILL add flavor. I'm doing a small chicken along with a pork shoulder tonight. I hope you smell it whenever you live. See ya in 8 hrs. 2020 hasn't given us much joy. But this gathering of friends to celebrate Dave Rahn's retirement made up for all of it. The individuals in these pictures had a HUGE influence on my formative years. They were, and are, the Mt Rushmore of youth ministry. I didn't belong. I was merely an admirer. But thankful.
