Minted Coconut Spinach and Radish

- Coconut Oil simmered with Rosemarie

- Onions shredded, with some scallions

- Red Beets cubed as best as I could

- Garlic & Herb seasoning, some kosher salt, etc.

- Mint on top - 3 to for 4 minutes before a full stir

- Black Beans added at the end so they wouldn't be mushy.

Salmon cured with Onion, White Sauce, Garlic - Topped with pre-cooked Veggies-Tofu-etc.

Made in about 20 minutes, 5 minutes of getting the photos too... about 3-4 servings honestly. Basically one side is black beans and beet; otherside sweet potato fingerlings and sliced small cucumbers (straight not across). "Whatever makes you happy"
