These Parmesan Potato Patties are crispy on the outside, tender on the inside, and packed with delicious flavors. Perfect as a side dish or appetizer!
Ingredients: 2 large potatoes, peeled and grated. 1/2 cup grated parmesan cheese. 1/4 cup breadcrumbs. 1 egg, beaten. 2 tablespoons chopped fresh parsley. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: In a large bowl, combine grated potatoes, parmesan cheese, breadcrumbs, beaten egg, chopped parsley, salt, and pepper. Mix well until evenly combined. Heat olive oil in a skillet over medium heat. Form potato mixture into patties and carefully place them in the skillet. Cook patties for about 4-5 minutes on each side, or until golden brown and crispy. Remove patties from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve hot and enjoy!
