This slow cooker soup is a hearty and comforting meal that's perfect for those busy days when you don't have time to cook. Packed with tender chicken, nutritious vegetables, and flavorful herbs, it's a healthier alternative to fast food.
Ingredients: 1 lb chicken breast, diced. 4 cups chicken broth. 1 can diced tomatoes, undrained. 1 cup chopped carrots. 1 cup chopped celery. 1 cup chopped onion. 2 cloves garlic, minced. 1 tsp dried thyme. 1 tsp dried rosemary. 1/2 tsp salt. 1/4 tsp black pepper. 2 cups chopped spinach. 1/2 cup heavy cream.
Instructions: Do not forget to add salt, black pepper, thyme, rosemary, chicken broth, diced tomatoes, carrots, celery, onion, garlic, and chicken. Turn the heat to low and cook for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is done and the vegetables are soft. Add heavy cream and chopped spinach. Put the lid on top and cook on low for another 15 to 30 minutes, until the soup is hot and the spinach has wilted. Enjoy while hot!
