Tofu, bell peppers, and onions marinated in a special sauce and grilled to perfection make Fajita Tofu Kebabs, a tasty vegan take on the traditional kebab.
Ingredients: 1 block extra-firm tofu, pressed and cubed. 1 red bell pepper, chopped into chunks. 1 green bell pepper, chopped into chunks. 1 yellow onion, chopped into chunks. 2 tablespoons olive oil. 1 tablespoon lime juice. 2 cloves garlic, minced. 1 teaspoon chili powder. 1 teaspoon ground cumin. 1/2 teaspoon smoked paprika. Salt and pepper to taste. Wooden skewers, soaked in water.
Instructions: In a small bowl, mix olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper to create the marinade. Thread tofu cubes, bell pepper chunks, and onion pieces alternately onto the soaked skewers. Place the skewers in a shallow dish and pour the marinade over them, ensuring even coating. Marinate in the refrigerator for at least 30 minutes. Preheat grill to medium-high heat. Once the grill is hot, place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until tofu is lightly browned and vegetables are tender. Remove from grill and serve hot.
