Well yeah. Night happens every night, whether you want it to or not. It's regularity was seen more as a fundamental element of the universe rather than a phenomenon that could be influenced.

And Nyx wasn't just the goddess of night. She was the goddess of everything hidden, unknown, and taboo. Oftentimes when cult practices for existing gods formed they were referred to as "Baccus Nox" or "Venus Nox" as in "The esoteric or taboo form of this god."

Nyx was almost a representation of everything humans did not or could not understand about the world. Its hard to make a deal with the personification of incomprehensibility.
