Savory Celery Root Cocktails !
Ingredients:
For the Cocktail:
1.5 oz celeriac infusion (recipe below)
1 oz pineapple juice
.5 oz fresh squeezed and strained lime juice
.5 oz honey syrup
For the Celeriac Infusion:
¾ cup celeriac or celery root, peeled and roughly chopped
1 cup gin or vodka
Directions:
For the Cocktail:
(1) Add all ingredients to a cocktail shaker filled with ice. Shake and strain into a chilled coupe.
For the Celeriac Infusion:
(1) Combine celery root and spirit in a covered container. Let sit for three hours, then strain through a fine mesh sieve and store in the fridge.

Rhubarb Cranberry Gin Christmas Cocktail !
Ingredients:
1 oz rhubarb gin
1 oz cranberry juice
2 oz sparkling lemonade
fresh lemon rind for garnish
fresh cranberries, cut in half, for garnish
sugar for rimming the glass
Instructions:
First prepare your cocktail glass by adding a rim of sugar (see tips above for how to do this).
Mix all of the above ingredients in a shaker with ice, gently because the lemonade is carbonated.
Pour into a fancy glass, straining the ice, being careful not to disturb the sugar rim.
Garnish with a lemon peel twist and halved cranberries (see tips above).

Ingredients:
2 oz Knappogue Castle 12 Year Old Single Malt Irish Whiskey .75 oz unfiltered apple cider .75 oz lemon juice .5 oz wildflower honey syrup (2 parts honey : 1 part water) .25 oz benedictine 1 oz ginger beer
Instructions:
Add ginger beer to bottom of rocks glass. Combine remaining ingredients in a shaker tin over ice, shake, and strain into glass.

Ingredients:
2 oz Tequila Japaleno .5 oz triple sec 1 oz lime juice .75 oz green juice .5 oz simple syrup
Instructions:
Coat the rims of your glasses in salt and lime zest. Add all ingredients to a shaker with ice. Shake and strain over fresh ice. As a finishing touch garnish with a lime wedge and clovers.
