Status on my au's in general

Been working on a lot of Sonic au's as a lot of ideas have been popping in my head, but I'm starting to lose track of them and my document is looking like a mess. The motivation to design all of it and adding a story has been seriously torturing me, I don't know if I should just keep working on it or just take a break. I will still post updates on my au's, but it's just going to be the Sonic Little Nightmares one since it's the easiest for me to work with since the story is still the same. How do writers do this I can't
