reviving the independent taco

Torchys hasn’t had the Independent taco for a few years now and we miss it so badly!! I changed the recipie slightly by double battering the mushrooms and using canola oil instead of coconut oil.

Homemade ramen with short cuts

Ramen noodles, store bought ramen base, pre cooked pork belly, soft boiled eggs, bok choy, bell pepper, tomato, noodles, fried garlic. I actually didn’t like the premade pork belly at all, every time I try and buy a premade protein that’s not like, air fried chicken nuggets I take a big L. The ramen base was ok but it had all these weird ginger chunks and I think I prefer my method of just adding stuff to chicken stock until it tastes good.

Feta Duck egg avocado toast with chili crisp

I really woke up this morning and said, how many dumb internet hacks can I fit into a single piece of toast.

Found duck eggs at the farmers market and was delighted. I used the bell pepper as an egg mold and used feta instead of oil to make it a feta egg.

We’re trying to get these triglycerides down so I’ve been eating a lot of like, overnight oats lately (the easy cheap kind you make, not the kind the podcasts think you should pay 500$ for), but this came out really pretty. Quinoa cooked with better than boullion, feta, avocado, cucumber, tomato, bell pepper, pickled red onions, garlic confit, home grown spicy sprout mix. I used a vegetable chopper my mom got me as a Christmas present to get everything exactly the same size, and tbh I don’t really need it but it was so much faster than individually dicing everything

Been a while since I made something with visual interest. Been really digging rice paper lately, it’s really nice and holds together way better than I was expecting.

sourdough loaf

I revived my sourdough starter that I neglected for a year (miraculously not only still alive but not moldy at all?) and baked some bread! They are just ok tbh. I baked one loaf same day and let the other cold ferment in the fridge over night and that loaf was way better tasting. Tbh I usually just like using the starter to make pizza crust but I guess I can make normal bread once in a while lmao

Coconut gochujang lentils

This was so extremely insanely delicious and if it’s within your means to make it and you like lentils or even just “can tolerate them” you need to make this rn I’m not kidding. One of the best things I’ve ever eaten.
