These Dark Chocolate Dipped Peanut Butter Meringue Cookies are a delectable blend of airy meringue and rich peanut butter, topped with a decadent dark chocolate coating. They are ideal for any occasion and will certainly satisfy your sweet tooth!
Ingredients: 4 large egg whites. 1 cup granulated sugar. 1/4 teaspoon cream of tartar. 1 cup creamy peanut butter. 1 cup dark chocolate chips.
Instructions: Start by heating the oven to 250F 120C. Put parchment paper on the bottom of a baking sheet. Using an electric mixer, beat the egg whites in a large bowl until they get foamy. Keep beating after adding the cream of tartar until soft peaks form. A spoonful at a time, add the granulated sugar and beat until stiff, glossy peaks form. Add the creamy peanut butter slowly and mix it in until it's all mixed in. Drop spoonfuls of the meringue mix onto the baking sheet that has been prepared. Put the cookies in the oven for 60 to 75 minutes, or until the outside is dry and crisp. Before taking the cookies off the baking sheet, let them cool all the way down. In a bowl that can go in the microwave, melt the dark chocolate chips for 30 seconds at a time, stirring after each time until the chocolate is smooth and melted. After the cookies have cooled, dip them half way into the melted dark chocolate and put them on a baking sheet lined with parchment paper. You can put the chocolate in the fridge or at room temperature to set faster. The cookies are ready to eat once the chocolate has hardened. Any leftovers should be kept in a container that won't let air in so they stay crisp.
