A simple yet delicious classic Italian pasta dish made with only four main ingredients: spaghetti, pancetta or bacon, eggs, and Parmesan cheese. Perfect for a quick and satisfying meal for two.
Ingredients: 200g spaghetti. 100g pancetta or bacon, diced. 2 large eggs. 50g grated Parmesan cheese, plus extra to serve.
Instructions: Follow the directions on the package to cook the spaghetti until it is al dente. Save 1/2 cup of the pasta water before you drain it. On medium heat, cook the pancetta or bacon in a different pan until it is crispy. Grate Parmesan cheese and eggs together in a bowl. Put pancetta or bacon into the pan with the cooked spaghetti. Sprinkle to mix. Take the pan off the heat and quickly add the egg and cheese mix. It will cook the eggs without making them scramble. If the sauce is too thick, slowly add the pasta water that you saved until you get the consistency you want. Put extra grated Parmesan cheese on top and serve right away.
