Ingredients: 2 cans chickpeas, drained and rinsed. 2 cups fresh spinach, chopped. 1/2 cup breadcrumbs. 1/4 cup red onion, finely chopped. 2 cloves garlic, minced. 1/4 cup feta cheese, crumbled. 1 egg. 1 tsp cumin. 1/2 tsp paprika. Salt and pepper to taste. 4 whole wheat burger buns. Toppings of your choice lettuce, tomato, onion, mayo, ketchup, etc..
Instructions: In a food processor, combine chickpeas, chopped spinach, breadcrumbs, red onion, minced garlic, crumbled feta cheese, egg, cumin, paprika, salt, and pepper. Pulse the mixture until it's well combined but still has some texture. You don't want it to be completely smooth. Form the mixture into 4 patties and place them on a plate or tray. Heat a grill or skillet over medium-high heat and lightly oil it to prevent sticking. Place the chickpea spinach patties on the grill or skillet and cook for about 4-5 minutes per side, or until they are golden brown and heated through. While the patties are cooking, toast the whole wheat burger buns on the grill or in a toaster until they're lightly browned. Assemble your chickpea spinach burgers by placing each patty on a toasted bun and adding your favorite toppings. Serve hot and enjoy!

If the sauce is too thick, slowly add the pasta water that you saved until you get the consistency you want. Put extra grated Parmesan cheese on top and serve right away.
