I made Fideo topped with a chorizo granola. I am really proud of it, and it was delicious. I felt very creative with this one!

I turned a BUNCH of potatoes that we used in school for a knife practical into this loaf :) She may be ugly, but she was warm and fluffy and reduced kitchen waste!

Grilled swordfish with crispy sticky rice! This was my first time experimenting with this protein and I am so happy to say it turned out delicious! The sticky rice patty was flavored with a Thai coconut curry sauce I made, and the swordfish itself was also marinated in a similar concoction. One thing I would change, there was too much rice! Maybe I would try a somewhat more refreshing flavor profile next time as well.

My first post! It was a chilly evening so I put together chicken tortilla soup. Then, for desert, I fried up some sopapillas with sugar, honey, and cinnamon. This dish was so fun to make, and super nostalgic for me. My mom used to make sopapillas for me and my sister as an after school snack often.
