I am a Zumba junkie! If I have a teacher I like that choreographs fun dance moves than I am there! At my new gym in Florida I have found 2 teachers that I love! I get so into it that I almost passes out a couple of times. Tonight I motivated myself to put on work out clothes & drive to the gym because Jessica was teaching and it would be fun and feel good. Side not I usually burn about 900 calories during her class or so says my Up band (post about Up to come soon!). I get all the way to the gym to find our that we have a sub, a girl that I have tried her class before and far from loved it. No offense to her but her songs and rhythm just aren’t for me. So here I am all dressed up with no place to dance. I decided to get my cardio on like a good gym goer. All in all cardio stinks without your headphones. Maybe I need check the schedule before I leave. My point is not just to complain about tonight but to. Say find what you like and stick to it. Don’t lift weights or go running if it’s torture, if you are torturing yourself you won't keep up and meet your goals. Keep it motivated and fun.
Lunch time!! I have been addicted to Perdue gluten free chicken nuggets which yet are GF but are not the healthiest meal that I can have. And I was craving something clean. We had salmon for dinner last night and there was a big piece left over so I added a bit into my salad, I also had a bed of spinach, avocado and mozzarella with poppy dressing. So easy, healthy and yummy!

These cookies are delish! Very flavorful and moist and my non gluten free boyfriend and BFF loved them too! Job well done pillsbury !
Delicious chili lime salmon with white rice and asparagus. It was 100 % GF and super easy. Dinner was done in 10 minutes, I will absolutely be making that again!
Glaze instructions: 2 tbsp honey 1 lime Chili powder Garlic powder Salt &Pepper I am not one to measure when I cook I go by taste, how hot, sweet or tart you like your salmon
Deep Breath & Dive In
I have always been the kid who didn't try something new until i figured out all of the possibilities first. I wouldn't climb a tree if I didn't know how I would get down. My whole life I have had an amazing support system but since my move it has locally dwindled to a few. But today I decided that I wasn't going to take a census on what every thought but just jump in alone.
I went to my first ever cycle class, completely alone. Now I know you all probably think that shouldn't be a big deal but to me it is huge. I have been slacking on working out the past few days and thought trying something new would spice it up.
I made a friend! An older man, i forgot his name (i am awful with them) and he even cleaned off my bike for me at the end of class. It was so sweet. But anyway back to the class itself..... It was tough, very aerobic and with the different gears very demanding.
I am so not comfortable with those seats, I think I have a bruise on my butt. Don't worry my friend told me that I should get a seat cover (next stop sport authority!). I really liked it and will def be going back and I hope I have inspired at least one other person to try something new, big or small, a step forward is an accomplishment.

Motivation to Move
I am obviously not an athlete or a work out junkie, but I am trying very hard to motivate myself everyday to do something positive for my mind and body. There alot of things going on in my life, just like anyone else's and I am trying to handle my stress in a constructive manner. Writing here has helped more than I thought it could and Zumba and Yoga have helped too. But sometimes I get so addicted to my Netflix making the struggle to get off the couch and to the gym very difficult. But finding these motivational pics that I now put as my phone's wallpaper has helped a great deal. Here are some of my favorites!
How do you motivate yourself to work out? whats your fav stress outlet? I always love to try new things and I hope you do to!
September Goals
September is it the end of summer or the beginning of fall? In Florida it is still midsummer and Hot Hot Hot! I have decided to set goals each month and seeing that it is already the 5th these goals will not be catastrophic.
~ Work Out At Least 4 Times A Week: fitness is becoming a great outlet for me to de-stress and I am addicted to Zumba which is very fun. It is an hour at the gym that flys by and I don't have to worry about what to do.
~Plan My Visit Home: I have not decided when I will be going back to Ct to visit. I am a little homesick and love a good countdown.
~ Create A Logo: Not only am I not very tech savy and can barely figure out how to blog but I also can rarely make a decision and stick to it. A logo is a big deal it defines my blog and the direction that I want to take. It's a big deal!
~ Follow My To Do Lists: I make a to do list almost everyday, on the cutest stationary and post-its. But I always seem to find other things to do; procrastination is my strong suit. This month I will try my hardest to stick to the plan, I love a good plan.

Sushi Addict
I am without a doubt an addict when it comes to Sushi. My friends in college exposed me to it a few years ago and I have been absolutely hooked ever since. And of course my favorites were anything fried, which no living without gluten I can no longer have.
Recently I went to Disney world with my boyfriend we ate at a restaurant in Japan and they were so accommodating to my allergy. The manager explained to me what on the menu was safe for me to eat and they even had gluten free soy sauce there ( I was too embarrassed to admit that I didn't know soy sauce even had gluten).
Unfortunately not every sushi joint is as aware of the allergy, so it's up to you to order very specifically and be aware of what to avoid. And if they don't have gluten free soy sauce bring your own! or just order extra spicy mayo like me.
This is what I got last night for dinner, and see I am learning i had to scrap off the crunchies on top because I forgot to order without it. Eating out is a serious struggle but it is worth the fight!

So, I have been going through quite a few changes in my life recently, I moved from Ct to Florida about a month ago and just before I left my doctor told me that I have a new allergy. For the past few years I have been having a great deal of trouble loosing weight and digesting food. When I told Dr. T about my troubles he said that he has heard of these symptoms in a few of his patients around my age and he sent them through the mill from specialist to specialist for countless tests and it always come out that they are allergic to the way that wheat is processed not the wheat itself. Now a days food is so processed that our bodies do not know how to break it down anymore. Because of this he suggested a gluten-free lifestyle, which terrified me. This is not just a diet that I can follow for a period of time and then retreat into my past ways, THIS IS FOREVER. I was in denial for a few weeks, refusing to believe that I could survive without pizza, pasta and bread. Would I have to live off of meats and veggies? I then decided that eating these gluten rich things were not worth the damage that I was causing my body. So I checked out Publix (which is a new land of groceries for me) and asked if they had a gluten-free section, sure enough they have one of the best array of items. My Word a lot of these products are not coast efficient but they are satisfying and cause me no pain, which to me I would pay anything for that. So I have decided to dedicate this blog to my new GF lifestyle, to trying new recipes and sharing tips to eating out and tracking my weight loss journey. I struggle with breakfast, I get bored of having a greek yogurt and fruit everyday, and sure enough Pinterest is such a good resource. I found these pumpkin cupcakes that looked delicious and has very seasonal flavors. I made the glaze but did not really like it and left it off of my batch, it was too much honey for me nut it's totally up to you. Without the glaze it made them more of a muffin and more appropriate for breakfast. I cant wait to make them again! I hope everyone can give GF a chance. My roommates and boyfriend have been great about trying my new experiments. Thanks Guys!
INGREDIENTSFor cupcakes:
1/3 cup oil 1 cup sugar 1/4 cup almond milk 1 teaspoon vanilla extract 1 1/4 cups Bob's Red Mill Gluten-Free All-purpose Flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/4 teaspoon ground cinnamon 1 cup canned pumpkin 1/2 cup chocolate chips
For glaze:(optional) 1/4 cup brown rice syrup or honey 1 tablespoon margarine or coconut oil, melted 1/2 teaspoon vanilla extract Pinch ground cinnamon
DIRECTIONS
To make cupcakes: Preheat oven to 350 degrees F. Line muffin tin with cupcake liners.
Whisk together oil, sugar, nondairy milk, and vanilla. Sift in flour, baking powder, baking soda, cinnamon, and salt. Gently whisk flour mixture until well combined. Fold in pumpkin, but do not overstir or the batter will become gummy. Fold in chocolate chips.
Fill liners two-thirds full. Bake for 24-26 minutes or until toothpick comes out clean. Transfer to a wire rack to let cool completely.
To make icing: Whisk together rice syrup, margarine, vanilla extract, and cinnamon in a small bowl. Using a fork, drizzle icing atop completely cooled cupcakes.
