Happy Blizzardstormshipping Day 2020! I'll be making this a master post so enjoy!
Initially I headcanoned that Jessica is the one who likes Toby first and he's kind of oblivious but now I headcanon it the other way around simply because I like the idea of Toby daydreaming about what their relationship could be like while Jessica remains oblivious, despite being a self- proclaimed "romance expert"
Toby starts to realize he sees Jessica as more than a friend at the judo tournament and has pretty much accepted that he likes her by the end of Season 1. Jessica, on the other hand, takes until the dome episode to even consider that she might actually like him and then realizes she really does at the school dance.
Despite what they like to think, both Nick and Lucas are aware that they are dating in Season 3 (granted, Nick had to tell Lucas since the poor guy is pretty dense)
Even when they're dating, if a competitive event happens, they cannot resist the urge to compete against each other
Jessica is saved in Toby's contacts as either "blow me away girl" or "wind witch 😉". Toby is saved in Jessica's contacts as..."fish boy 💖"
They both jokingly refer to any instance where they are paired together in Gorm as "dates" when they start dating
Toby insists that when Tori was born, he "may have shed a tear or two". In reality, he was positively bawling. Partly because he was overwhelmed and partly because Jessica nearly broke his hand.
Jessica does the cooking in the household. Toby tries once when Jessica's pregnant with Tori and, just like that one time when he was younger, he nearly sets the kitchen on fire.
Even though Toby insists he can't sing, whenever he notices that Jessica is particularly stressed or upset about something, he will sing to her to make her feel better
Toby works as a paramedic while Jessica writes a fashion column for a high profile magazine.
Whenever either of them aren't feeling 100%, they like to cuddle with each other until they do.
Jessica has a tendency to not be very hard on Tori and Erin because she doesn't want her kids to fear/hate her (she wants a better relationship with her children than she had with her mother) so Toby usually ends up being the stricter parent (not by much, though)
Jessica always makes sure she is awake to greet Toby when he comes home from work (he works nights) because she wants to be able to see him come home.
Nick is best man at their wedding while Lucas gives Jessica away. Gina is her maid of honour.
Toby is nearly always the one who initiates the kisses.
Their wedding takes place on the beach at summertime. Pretty much the entire town shows up.
Toby gives Jessica a red rose once when they're kids (at the time he didn't know what it meant) and he doesn't understand why Nick finds it hilarious until he explains it to him (Lucas also knows what a red rose means but he assumes it's just a gift in this case). After Jessica tells him that roses are her favourite flower (surprisingly she doesn't know what they mean, either), he makes it a point to give her roses every now and then, eventually not caring how it must look to everyone when he's actually developed feelings for her.

Story: Rainstar is the eldest of his parents' first litter. As a kit and apprentice, he is rather rambunctious, though protective of his littermate. He has a tendency to act first and think later but still has a good heart. At his first gathering, he meets Featherpaw (Jessica), a WindClan apprentice and immediately develops a crush on her, though she is oblivious to it for a while. He also meets Yewpaw (Ike) of ShadowClan and develops a mutual dislike for him after he picks on Stonepaw for his small size.
When a group of rogues invade camp, Rainpaw decides to help drive them away along with Stonepaw. They are successful but his recklessness causes the death of his mentor. Despite this, he and his brother are given their warrior names.
The events of that day cause him to mature greatly as he becomes more responsible, never wanting another cat to die because of him. This eventually culminates in the leader naming him deputy after the previous one dies from greencough.

Just a collection of headcanons for Tori I figured it would be easier to put them all together 🙂
She's aro/ace, possibly demi (I haven't quite decided but she's definitely on that spectrum)
She's selective mute
After she recovers her powers, she either doesn't have any offensive powers or she does (but just can't use them unless it's an emergency). Either way, she is the healer of the AU.
She has a reputation of being an ice queen since she's a loner and cold to pretty much everyone
She has a tendency to be brutally honest with people
She's been taking dance lessons and horse riding lessons since she was small.
She owns a cat named Shadow
She may possibly suffer from some type of anxiety disorder and/or depression as a result of a childhood event
She hates the idea of being pregnant and having to give birth
She's closer to Toby than she is with Jessica (she's still pretty close with her, though)
She hates taking advice from other people and is more likely to give them advice if they try
Her favourite months are autumn and winter. Spring is alright for her but she absolutely hates summer
She doesn't take any risks if she can help it - she likes to have everything planned out
She can occasionally come across as arrogant on occasions, especially when she knows she's good at something

Ooh, that's an interesting one! I think he and Toby would be best friends/prank brothers (kind of like the Weasley twins from Harry Potter, except not biologically related). People fear them when they get together - Toby plans the pranks and Hugo plans how they can get away with them.
He'd probably be one of the first people to realize that Jessica likes Toby, even before she does herself, and he teases her constantly about it but his comments/hints completely fly over her head. He also repeatedly tells Toby to ask his sister out already before some other guy does but the latter always chickens out.
He and Nick would have a neutral relationship - they know each other mainly through Toby but they're so different, they probably wouldn't have chosen to interact with each other of their own volition.
Lastly, he thinks Lucas is really cool. Any time Lucas starts a protest or anything, he's always one of the first people to get involved, especially if it's to defend him against people who might make fun of him.
